Italy is the fifth largest producer of milk in Europe<\/strong>, on par with the Netherlands; it is the third largest producer of cheese in the EU<\/strong>, with a well-integrated tradition and advanced know-how.<\/p>\n

The dairy sector is a fundamental component of Italian agri-food. There are numerous excellences in this sector that have always been present on our tables, but are now irreplaceable also for foreign consumers. This is proven by the export data for 2020, a year of enormous difficulties but in which Italy managed to position itself sixth in the top 10 of world exporters<\/strong>, with a turnover of over \u20ac3 billion. Approximately 40% of Italian dairy production is sold abroad<\/strong>. Among the top buyers are France, Belgium, Germany, the Netherlands, and the United States, but prospects in China are also interesting. Among the historical products that continue to be successful, the mozzarella<\/strong> undoubtedly deserves mention, followed by Grana Padano<\/strong> and Parmigiano Reggiano<\/strong>, now authentic icons of Made in Italy food, the result of an ancient tradition and rigorous production rules!<\/p>\n

Northern Italy produces 82% of national milk<\/strong>. The four regions involved are Lombardy (38% of production), Emilia Romagna (17%), Veneto (11%) and Piedmont (8.2%).<\/p>\n\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/section>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/section>\n\t\t\t\t

\n\t\t\t\t\t\t\t\t\tUpon arrival in Milan, you will be greeted by our tour guide who will accompany you throughout the trip. \n\t\t\t\t\t\t\t\t\tIn the morning, meet with a representative of ANAFI, the National Association of Italian Frisian and Brown Cattle Breeders, for an exchange and a brief overview of the Italian dairy chain.\r\n\r\nNext, visit a large-scale dairy farm with approximately 1100 dairy cows and a technologically advanced barn with LELY robots.\r\n\r\nEnjoy a long lunch during the excursion.\r\n\r\nAfter lunch, continue towards Piacenza for a visit to a dairy farm with 180 lactating cows and 3 milking robots. \n\t\t\t\t\t\t\t\t\tIn the morning, depart for Parma. Visit a dairy where they produce the Parmigiano Reggiano DOP<\/strong>. You will see the various stages of milk processing and transformation, and visit the aging room<\/strong>.\r\n\r\nNext, continue on to Langhirano to visit a salami factory<\/strong> where they produce the Prosciutto Crudo di Parma DOP<\/strong>. Morning visit to the Ferrari Museum<\/strong> in Maranello (lasting about 2 hours).<\/p>\n

Lunch at an Acetaia<\/strong>, where you will also witness the production process of the precious Balsamic Vinegar of Modena DOP.<\/strong><\/p>\n

In the afternoon, arrival at Lake Garda and a stroll in Sirmione<\/strong>, a beautiful medieval village with a 13th century castle.<\/p>\n

Transfer to the Vicenza area. Meeting and visit with a representative from ARAV (Regional Association of Veneto Breeders). The ARAV laboratory has been operating for years in the agricultural, zootechnical, and agro-food sectors. The main matrices analyzed are milk and dairy products, feed, meat, soil, water, and compost. <\/p>\n

Following that, visit to a particularly interesting dairy company from a technological point of view: they have created a system to manage the company through a mobile APP. <\/p>\n

Lunch in a typical restaurant.<\/p>\n

In the afternoon, visit to a dairy cooperative, a leader in the territory for the production and distribution of milk and dairy products (and the only producer of ASIAGO DOP cheese). They produce an average of 3,500 quintals of milk per day; they have about 400 associated agricultural companies.<\/p>\n
